Healthy easy dressings for your greens!

With bounties of greens week after week and loads of fresh salads, it's easy to get tired of the same old vinaigrettes! I've been trying to change it up in the kitchen and thought I would share my favorites with you all. These are all uncomplicated, healthy and delicious dressings that suit any mood you are in.

Miso Dressing  - savory and creamy

  • 2 Tbsp Miso (soybean paste)
  • 2 tsp mustard (any kind is good)
  • 1 Tbsp water
  • 1 1/2 Tbsp lemon or lime juice (fresh)
  • 1/4 cup extra virgin olive oil (good quality)
  • 1 tsp ginger (fresh), grated

Mix together in a bowl with a spoon until creamy. Excellent with kale, herbs, avocado and strawberry salad.

Strawberry Balsamic Vinaigerette - sweet and light

  • 1/4 cup of diced strawberries
  • 1/2 cup of balsamic vinegar
  • /4 cup extra virgin olive oil (good quality)
  • pinch of Himalayan salt  

Combine in a bowl and then spoon onto salad. Exceptional with a tender lettuce such as green leaf or bibb, sliced cucumbers and fresh dill.

Tahini Dressing - savory and creamy

  • big scoop of raw tahini (I use alot in this and adjust to taste)
  • 2 tbsp of amino acids
  • 2 tbsp of apple cider vinegar
  • 2 tbsp of water  

Blend using a hand blender and adjust to taste. This is my favorite dressing and go-to for entertaining because it is so satisfying, nutty and delicious. Best with a salad of curly kale or collards, avocado, diced cucumber, grape tomatoes and sesame seeds.

Garlic Vinaigrette - Sweet, spicy and light

  • 1/2 cup of sushi wine vinegar
  • 3-4 cloves of crushed garlic
  • 1/4 cup of olive oil
  • pinch of Himalayan salt
  • pinch of black pepper

This is a very versatile dressing. You can dress almost any green with this and it will be punchy and tantalizing. WARNING: you will have garlic breathe, but it is well worth it.
